Dive in to these delicious Strawberry Cheesecake cupcakes! I’m a big fan of Strawberry cheescake and cupcakes separately, but combine the two together and OMG. My two favourite sweet things in one recipe!
Over a year ago my husband bought me a little invention called a cupcake corer, with the intention of me making lots of yummy cupcakes I guess. Here’s the thing though, whilst I love baking, I actually very rarely make cupcakes. He clearly never realised or was just dropping a major hint.
Truthfully, even though I love cupcakes I’m just crap at icing them. I’ve watched video after video, but it just always looks rubbish. So I thought perhaps if I made some for the blog I would face my (icing related) demons and finally put the cupcake corer to use.
Let’s see how I got on shall we?

Strawberry Cheesecake Cupcakes recipe
Cupcakes
- 110g soft butter
- 110g caster sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 110g self-raising flour
- 1-2 tbsp milk
Topping
- 150g softened butter
- 450g icing sugar, sifted
- 180g tub full-fat cream cheese
- 2 tsp vanilla extract
- 12 tsp strawberry jam
- 12 fresh strawberries
Method
1# Pre-heat the oven to 180 degrees and pop 12 cupcake cases in a muffin tin.
2# Mix together the butter and sugar until combined, add the vanilla extract and then gradually the beaten egg .
3# Sift in the flour and then add just enough milk to soften a little.
4# Bake for around 10 – 15 minutes until a golden brown and leave to cool.
5# To make the icing, sift the icing sugar in to a bowl. Add the butter and beat together. Finally, add the cream cheese and mix until you have a light fluffy icing.
6# When the cupcakes have cooled, use a cup cake corer or knife to make a hole in each cupcake. Fill the centre with a tsp of strawberry jam and then pop the top cm of cake back on top.
7# Ice the cupcakes with the frosting and garnish with a strawberry.
