Hello cupcakes my old friend, I couldn’t be more pleased to see you.
Yes, it’s been a while since any baking posts have appeared on my blog. If you don’t already know, I’m currently following the slimming world plan and it has helped me to lose 26lbs so far. You can read a little more about that in my post about what I eat in a typical day on this slimming world plan over here. Spoiler alert: it doesn’t include Nutella cupcakes!
However, this month it happens to be my adorable nephews very first birthday. I just had to bake something special that would make his sparkling big blue eyes light up. Like his Auntie, he’s a big fan of cake! These Nutella cupcakes certainly seemed to do the trick.
The best part is, they are incredibly simple and quick to make. Absolutely ideal if you want to make a couple of batches for a party. Plus it’s very easy to adapt them to suit your tastes. I actually made one batch that were vanilla sponge and icing with a Nutella core – also very yummy!
So let’s get cracking with the recipe, shall we?
Nutella cupcakes recipe (makes 12)
Ingredients
For the sponge
- 120g caster sugar
- 120g butter
- 2 eggs
- 1 tsp vanilla extract
- 120g self raising flour
- 3 tbsp milk
- 50g milk chocolate chips
For the frosting
- 250g icing sugar
- 125g butter
- 3 tbsp Nutella
- 2-3 tbsp milk
Method
1# Pre-heat the oven to 180 degrees and line a baking tray with 12 cupcake cases.
2# Cream together the sugar and butter until completely combined. Whisk together the eggs and vanilla essence and then slowly add to the mixture stirring in as you go.
3# Sift in the flour gradually and then loosen the mixture with a little milk until it is smooth and pale. Add in the chocolate chips and give it a stir.
4# Put a dollop or two in each cupcake case and bake in the oven for around 15 minutes or until golden brown. You can check they are cooked by inserting a knife into the centre of the largest cupcake – if it comes out clean the sponge is cooked. Place on a baking tray to cool.
5# While the cupcakes are cooling make the frosting by combing the icing sugar and butter together until smooth. Add the Nutella and mix until thoroughly combined. Pop into a piping bag and frost those cupcakes! Add sprinkles if you’re feeling fancy and enjoy.
